Ok. So, this weekend marks the end of cold weather right!?! RIGHT?!
It better because I washed and put away all my winter coats and things today.
I'm really into cooking and baking lately, especially meal prepping on Sundays. I've been meaning to get on the meal prep train for years and now that I have, I totally get why it's such a thing. It takes major planning, but I think it's worth it. Today I made GP's Sweet Potato Muffins with Chinese 5-Spice (but you know I'm using AP flour because I am NOT about that gluten free life), hard-boiled eggs, tuna salad, these roasted beets, baked some sweet potatoes, Samin Nasrat's herbed yogurt + prepped carrots for dipping, and roasted a bunch of parsnips for this soup, which I hope to make tomorrow.
I've also decided to try and work through the BA's Best database of recipes. So far I've had great success with several sweet ones and had an epic fail with fettucine alfredo last night. There might have been tears involved. Fairly sure it was due to some hormonal craziness...only 18 weeks left...
I finally got around to reading Home Fire by Kamila Shamsie and loved it. Those last couple pages...WOW.
Someone put Ruth Reichl's For You Mom, Finally in the Little Free Library, so I pulled it out for a great read. Fun, but nothing mind-blowing.
